From Ingredients to Gelato
Come nasce il gelato
Gelato is made from surprisingly few things. Milk, sugar, and the fruit of the season — you can count them on one hand. Yet each one has a job to do. And once they are mixed, a second story begins — what happens to them on the way to the case.
Few ingredients, each with a job
The ingredient list of gelato is short. Milk and cream form the base. Sugar brings the sweetness. Fruit, nuts, or coffee take the lead role. That is nearly all of it.
What matters is that each ingredient has a separate job. One builds the base, one carries the sweetness, one carries the aroma. A good gelato is one where those jobs fit together. Let us look at the main ones, job by job.
The base — milk and cream
Milk is mostly water, and it is the ground the gelato stands on. It brings more than water, though. The proteins in milk give gelato a frame, and hold it together.
Cream is the milk ingredient that carries fat. Add it, and the texture turns smoother, and the richness grows — the sense of depth and satisfaction. As Chapter 1 said, gelato keeps its fat low, but never at zero. That small amount of fat carries both smoothness and flavor. Change the ratio of milk to cream, and the same recipe turns light or turns rich.
Sweetness, and softness — sugar
Sugar is there for sweetness, of course. But in gelato its work does not stop there. Sugar also keeps gelato soft.
Dissolve sugar in water, and that water becomes harder to freeze. This is why gelato does not set rock hard at freezer temperature. It stays soft enough for a spoon. So tuning the sweetness is also tuning how hard the gelato freezes. That is one of the most interesting facts in the craft. The Advanced edition treats it in detail. Here, remember one thing: sugar is not only a sweetener.
The lead role — fruit, nuts, coffee
If the ingredients so far are the base, the lead role belongs to whatever brings aroma and character. Fruit in season, roasted nuts, coffee, chocolate, tea. The variety in a gelato case comes from this one choice.
Chapter 1 showed that gelato carries the taste of its ingredients straight to you. So the quality of the ingredient becomes the quality of the cup. A well ripened fruit, a carefully roasted nut — makers take such care in buying because nothing here can be hidden.
The quiet worker — stabilizers
Near the end of an ingredient list you sometimes meet an unfamiliar word. Often it is stabilizersIngredients that bind free water and keep ice crystals from growing large, so the gelato stays smooth. Most of them come from seaweed or beans.. The name can sound alarming. Most of them are dietary fibers taken from seaweed or beans — natural sources.
The job of a stabilizer is to hold smoothness, in a very small amount. By binding water gently, it keeps ice crystals from growing large, and protects the melt from turning rough over time. A quiet worker. Nobody notices it, and nothing works without it.
The crema tradition — egg
Some gelato is made with egg, and above all with egg yolk. The rich family built on milk is called crema. Adding egg yolk is a tradition that deepens that richness further. Egg yolk brings water and fat together, gives cohesion, and adds a depth of its own.

Meanwhile, the fresher family built on fruit often uses no egg at all. These two great currents — crema with milk, and the fruit family without milk — are the subject of Chapter 4.
From ingredients to a cup
Milk and cream build the base. Sugar brings sweetness and softness. Fruit and nuts bring aroma. Stabilizers hold the smoothness, and egg adds richness. A short list, each one working its own post. That is gelato.
So how do these ingredients become that smooth cup? By passing through several steps, in order. Roughly: combine → heat → rest → freeze and stir → set. Let us follow them one at a time.
① Combine
It all starts by bringing the ingredients together. Milk, cream, sugar, and whatever carries the flavor are combined in chosen proportions. The liquid that results is called the mix.
Deciding those proportions is the part that takes the most thought. Sweetness, softness, richness — the maker holds in mind the jobs described above, and builds toward the taste being aimed at. Get this right, and every later step becomes easier.
② Heat
The mix is then heated. This step is called pasteurizationHeating the mix to kill the bacteria that can cause food poisoning. A step that safety requires.. Its first purpose is safety. The heat kills bacteria that could cause food poisoning, and leaves the mix safe to eat.
The heating brings a second gift. Under heat the ingredients settle into one another, and the ground for a smooth texture is laid. One step, serving safety and pleasure at once.
③ Rest
The heated mix is not frozen straight away. It rests in the cold for several hours, often overnight. This waiting is called agingResting the pasteurized mix at a low temperature for a while. The ingredients settle together, and the ground for a smooth texture is prepared..
During this time each ingredient settles with the water, and the flavors come together. The stabilizers from earlier in this chapter do their patient work here, preparing the smoothness. The wait is worth it. One night of patience changes tomorrow's melt.
④ Freeze and stir — the peak
Now comes the peak of the making. The rested mix goes into a machine built for the job. There it is cooled and stirred at the same time. This step is called mantecazione.

Why stir while freezing, instead of simply freezing? The greatest secret of smoothness lies here.
Freeze a mix quietly, and the water inside gathers into large lumps of ice. The result is coarse on the tongue. Stir while freezing, and the ice crystals stay very fine. Those crystals, too small for the tongue to find, are the true source of the smooth melt of gelato.
The same step also adds a little air. This is overrun, which Chapter 1 introduced. Stirring makes the ice fine, the texture smooth, and the whole thing light. Three things at once, in one turning drum.
The artisan's view
⑤ Set
Freshly stirred gelato is still too soft to hold a shape. So it is chilled quickly and made firm. This step is called hardeningCooling the freshly stirred gelato quickly, so that its fine texture is fixed in place and made stable..
Speed is what matters here. Set it slowly, and the ice crystals you worked to keep fine will grow large again. Cooling fast fixes the smoothness built at step ④. The gelato is then ready for the case, and for you.
Everything for the smoothness
Combine, heat, rest, freeze and stir, set. Laid out in a row, every step has a purpose. Above all, freezing while stirring — the peak — is what decides the smoothness of gelato.
